Vanilla Lemon Cake Recipe
Ingredients:
Cake:
1 cup soft butter
2 cups sugar
4 eggs
2 teaspoons vanilla
2 cups flour
1 tablespoon baking powder
1 teaspoon baking soda
2 teaspoons salt
1 cups milk
2 tablespoons lemon juice
1 tablespoon grated lemon zest
Icing:
1 ¼ cups butter
2 ½ cups icing sugar
2 tablespoons milk
2 teaspoons vanilla
Procedure:
Preheat oven to 350°
Beat butter and sugar together until creamy.
Add eggs one at a time and beat well after each.
Add vanilla and lemon zest.
In a separate bowl, combine flour, baking powder, baking soda and salt.
Then stir flour mixture into butter mixture, alternating with milk.
Gently fold in lemon juice.
Divide between two greased nine-inch pans.
Bake in the preheated oven for 30-35 minutes.
Make the icing. Cream butter with a mixer or wooden spoon until smooth and fluffy. Slowly beat in sugar until fully combined. Add in the vanilla extract. Pour in milk and beat for an additional three or four minutes.
Let the cake cool completely before adding butter icing inside and whipped cream on top.
Decorate with fruit.
